My name is Alan J. Cohen, but most people know me as AJ. I’m the owner of AJ’s Burgers in New Rochelle, and like many people, I struggled with my weight and maintaining a healthy lifestyle while balancing work, family, and everyday responsibilities.

What started as a personal decision to change my life quickly became something much bigger.

I wanted to eat better, feel better, and create a routine that actually worked long term, not another temporary diet. Through consistency, discipline, and learning what truly makes healthy eating sustainable, I developed a system that made meal prep easier, more convenient, and realistic for everyday life.

As my journey continued, I began preparing meals for my elderly mother. Having fresh, ready-to-eat home-cooked meals made her days easier, less stressful, and more enjoyable. She was able to eat well without the hassle of cooking, and seeing the impact that had on her meant everything to me.

That experience showed me how powerful simple, prepared meals can truly be.
